Meat processing safety, from the chain to the cold side.

Meat processing carries some of the highest injury rates of any Australian industry, and it draws close regulator attention because of it. Knife work, chain speed, machinery guarding, ammonia plant and wet floors all sit on the one site. I work through each of them with the people doing the job.

Machinery guarding and isolation

Guarding failures are the single most common enforcement finding in this industry. I check guarding on automated and semi-automated plant, and make sure emergency stops lock the plant off until they are deliberately reset rather than allowing a restart.

Knife work and repetitive tasks

Knife injuries and musculoskeletal strain drive the claim numbers on the chain. I look at knife condition and issue systems, task rotation, workstation height and how long people stand in one position.

Ammonia refrigeration

Ammonia plant sits alongside the processing floor and needs its own controls. I cover the emergency procedures, exposure response, and the interaction between the refrigeration system and everyone working near it.

Wet floors, level changes and platforms

Wet and greasy floors, steps between areas, and elevated processing platforms. I assess slip risk, edge protection and access so the working surfaces are not the hazard.

Cold, noise and biological exposure

Cold rooms, sustained noise on the floor, and biological exposure through handling. I set up the monitoring and the protective measures that suit how long people are actually exposed.

Contractors and shutdown work

Maintenance, cleaning and shutdown crews working around plant they did not commission. I handle induction, permits and isolation so everyone on site is accounted for.

Questions I get asked

What are the main safety risks in meat processing?
Machinery guarding and isolation, knife work and repetitive strain on the chain, ammonia refrigeration, wet and greasy floors with level changes between areas, cold rooms, sustained noise and biological exposure. This industry carries some of the highest injury rates in the country, which is why it draws the regulator attention it does.
What guarding is required on processing plant?
Guarding has to prevent access to moving parts while the plant runs, and it has to stay effective during cleaning and when someone clears a blockage. Emergency stops should lock the plant off until they are deliberately reset. Guarding failures are the single most common enforcement finding in this industry.
What are my obligations around ammonia refrigeration?
Ammonia plant needs its own controls alongside the processing floor: detection, an emergency procedure, an exposure response, and everyone working nearby knowing what to do when it alarms. The system also needs a documented inspection and maintenance regime.
How often should a risk assessment be reviewed?
Whenever something changes: new plant, a changed process, an incident, or a control that is no longer working. An annual review is the usual working standard on top of that. The regulations require a review when a control measure is found to be ineffective.
Does the law differ between states for a processing site?
The duties are close and the wording differs, along with the notification requirements and the penalties. New South Wales, Queensland, South Australia, Tasmania and Western Australia run the model WHS laws. Victoria runs the Occupational Health and Safety Act 2004. I set the systems up for the jurisdiction the site sits in.

Getting a processing site in order

A processing floor has too many hazards running at once to fix one at a time. I start with a full site walk and a risk register, get guarding and isolation right first because that is where the serious harm sits, then work through the chain tasks, the ammonia side and the contractor controls.
